A Berry Relaxing Treat: Blueberry Lavender Compote

Blueberries are chock full of antioxidants and lavender is has been proven to have a calming affect whether just smelt or consumed. Obviously, I found a way to marry the two in a delicious compote with just four ingredients.

Mix this stuff with some gin and you’ll definitely be able to relax.


Blueberry Lavender Compote

  • Servings: Makes about 2 cups

Ingredients
4 c. Frozen Blueberries
4 oz. Honey (use local if you can!)
1 1/2 tsp. chopped Fresh Lavender
Juice from 1 Lime

In a medium pot, heat the blueberries over medium-high heat until they start releasing their juices (10-15 mins). Add the honey, lavender, and lime juice and stir.

Continue to cook over medium-high heat for about 30 minutes or until the mixtures has reduced and is the consistency of maple syrup.

Serve warm over pancakes, ice cream, biscuits or whatever else you can get your hands on.
