Late Night Taste Experiments: Spicy Honey Apple Quesadillas

We’ve all been in a situation like this (for some of us, it’s an almost nightly occurrence): It’s 10:30 at night, and you’re hungry. So hungry, that you know a bag of popcorn or a bowl of ice cream won’t do the trick. And another full-fledged meal would be too much. So what’s a hangry person to do?

Make like a mad kitchen scientist, of course! And make this:
Spicy Honey Apple Quesadilla Header

Ingredients
1/4-1/2 c. shredded cheese of your choice
1/2 apple (I used honeycrisp), sliced
2 small flour tortillas
A drizzle of honey (no more than 1/4 tsp.)
A drizzle of sriracha (no more than 1/2 tsp.)
1 tsp. butter or oil
1/2 med. avocado, sliced

Directions
1. Lightly oil or butter one side of each tortilla. Sprinkle cheese on top of one of the tortillas.
2. Peel and slice half of an apple (about 1/4″ in thickness). Place sliced apples on top of the sprinkled cheese and drizzle the honey and sriracha on top.
3. Cover with the other tortilla and cook for 1 minute in the microwave or for 5 minutes on the stove in a small frying pan over medium-high heat (about 2 minutes per side).
4. Halve a ripe avocado and slice into thin pieces. Place the sliced avocado on top of the apples inside of the quesadilla. Cut into four pieces and enjoy!

Warning: I got a little spicy happy and put a little too much sriracha on (see above photo)… Suffice it to say, I almost burned off all of my tastebuds. Oops!
