Sorry for the lack of posts, this soon-to-be college graduate is up to her eyeballs in final projects, but fear not! I have a great recipe for your morning (or whenever!) enjoyment.
Morning Vanilla Chia Pudding
2 tbsp. chia seeds
1-2 tbsp. vanilla extract
1 tbsp. agave syrup or honey
1 cup unsweetened vanilla almond milk
Directions
In a small storage container, combine the chia seeds and almond milk. Add the vanilla extract and agave syrup and mix. Cover and cool in the fridge for at least four hours (I usually make this before I go to bed for the next day’s breakfast.) Check once or twice to make sure the seeds aren’t sticking together or your pudding will have a lumpy consistency.
Optional: Top with sliced fruit, I personally like strawberries… it tastes just like strawberry shortcake!
