From sandwiches to smoothies, Asian food to empanadas, we all have our favorite places to eat our favorite dishes. I am fortunate to live in the Hudson Valley, a hotbed of culinary activity, thanks in large part to the Culinary Institute of America, located in Hyde Park.
Here are a few of my favorite places to grab a snack or quick meal in the area:
Happy Meatless Monday! I’ve decided to take the plunge and become a part-time vegan. What this means is that each day, I will abstain from eating any kind of animal products (meat, dairy, eggs, etc.) until 6 p.m. where I may have animal products for dinner.
For this first day back on the vegan wagon, I decided to make a tofu sandwich. Crushed tortilla chips, adobo, honey and lime coated tofu is fried and sandwiched in-between two slices of whole grain bread with freshly mashed avocado and sliced tomato. Continue reading
As a kid, I hated bananas. You could try to hide it in bread, slice it and slather it with peanut butter, freeze it and cover it in chocolate; I wouldn’t eat it.
Fast forward to today, and I can’t get enough of the fruit! From “ice cream” to smoothies and eating it in its purest form, the banana has become a staple of my diet.
Recently, I’ve been experimenting with smoothie recipes in my blender, and like a mad scientist, concocted my best recipe to date. A banana, some blueberries, greek yogurt, almond milk and a spoonful of peanut butter are all blended together and make my PB&J Smoothie.
