Summer Smoothie Series, #3: Easy As (Key Lime) Pie

For the third smoothie in this series, I give you a drinkable and healthy version of a popular pie enjoyed in the summertime.

Creamy, sweet and tart, this smoothie tastes just like the real thing. Enjoy the flavors of Key Lime Pie in this drink without all of the sugar, fat and guilt you feel after having a slice or two.

Key Lime Pie Smoothie header

Ingredients
Smoothie
1/2 avocado
1 handful of baby spinach
1 1/2 c. ice
1 c. unsweetened vanilla almond milk
2 limes, juiced (3-4 if using Key Limes; I didn’t have any on hand, but ‘Lime Pie’ just doesn’t have the same ring.)
1 tbsp. sweetened condensed milk
1 tbsp. plain greek yogurt
1 tbsp. honey or other natural liquid sweetener (maple syrup, agave, etc.)

Topping
2 tbsp plain greek yogurt
1 tbsp. honey
Squeeze of lime (use the limes you’ve already juiced)

Optional: Slice of lime and crushed graham crackers for garnish

Directions
1. Dump all of the smoothie ingredients into a blender and mix until smooth.

2. In a small bowl, with a spoon or small spatula, fold the honey and lime juice into the yogurt.

3. Pour the smoothie into a glass (or two), spoon on the topping and garnish with crushed graham cracker and a slice of lime. Drink up!
