Summer Smoothie Series, #7: A Minion Approved Drink

I am a huge fan of the Despicable Me franchise, and like many others, I adore the minions. My current collection includes a large minion plush, a luggage tag, t-shirts and two themed board games…I know what you’re thinking; no, an incredibly eloquent 9-year-old is not running this blog (I think I’m more fanatic about these little yellow guys than a kid that age anyway). So naturally, when I saw a box of Minions cereal in the store (banana berry flavored, of course) I knew I had to make a smoothie. So, in honor of the movie coming out today, I give you…

  • Servings: 2-3
  • Difficulty: easy
  • Print
Ingredients
1 banana, frozen
1 medium sized mango
1/4 c. ice
3/4 c. vanilla almond milk
2 tbsp. banana chips, processed into a fine dust (I used a spice grinder for this)
1 tbsp. honey

Optional garnish: Crushed up Minions cereal and honey on the rim

Directions
1. Cut the frozen banana and mango into large chunks.
2. Dump the banana and mango along with the other smoothie ingredients into the blender and mix until smooth.
3. With the back of a spoon or your finger, rub honey around the top of the glasses you are using, and carefully roll into the crushed up cereal (about 1/2 cup). You may have to press the cereal on the areas with honey, depending on the size of the crushed cereal.
4. Pour the smoothie into the glasses, grab a couple of straws and enjoy!
