Cooked up some delicious and super rich vegan Oreo Pancakes (I used a recipe from the always fantastic Minimalist Baker; if you haven’t check out Dana’s blog you are missing out… she is killing it!) for a bit of a breakfast treat on this dreary Tuesday here in the Northeast. A few additions/tweaks I made to the recipe: a handful of hazelnuts to the ‘frosting’ (they were processed along with the coconut flakes), 1/4 cup coconut flour instead of the whole wheat (Note: You will need to use an additional 1/4 cup of liquid if you use this flour), and a tasty garnish of dark chocolate morsels and chia seeds before digging in.

When its cold and snowy out, I like to bake something, preferably in the form of a cookie. I decided to go with an old standby, Toll House Chocolate Chip Cookies. But as this is a blog about improving your eating habits, I made a few healthy tweaks.
